Dear Journal,
We started off our day by leaving Jerusalem and making our way down to Eilat. We stopped at a grocery store (iced coffee yay!) and then visited an eco- ranch where we learned about a family who left their comfortable life in Tel Aviv to build up communities in the Negev (and yes, they had air conditioning plus a phenomenal view of the Jordan River). After a scrumptious lunch of, you guessed it, schnitzel, we headed over to Kibbutz Lotan to learn about an ecologically safe lifestyle, solely focused on preserving the environment. We made seed balls, saw recycled playgrounds and enjoyed the coed compost bathrooms. We then drove to the Adi Hotel in Eilat, got dinner from Burgers Bar, and were inspired by Marge’s learning program on happiness. It was a great start to our visit in the Negev!
